Lazy Lentil Bruschetta Dinner

Sometimes even dietitians that love to cook need a lazy delicious dinner!

I have to share this super easy dinner idea! Also, thank you Trader Giotto for the delicious Bruschetta Sauce that pairs perfectly with Trader Joe's steamed lentils. You can combine these two items for a one minute, healthy dip for parties, or serve it warm with pasta for dinner like I did. I used gluten free elbows, but you can easily serve this over any pasta, rice, a bed of steamed spinach or kale, or use it to stuff peppers or zucchini. There are so many ways you can enjoy this.

All you need to make this:

One serving:

1 cup pasta (2oz)

1/2 cup lentils

1/3 cup bruschetta sauce

7 spears asparagus (or your favorite non-starchy vegetable)

1. Prepare pasta per directions.

2. Begin to steam asparagus just before taking pasta out of water.

3. While pasta is straining, warm sauce and lentils in pasta pan over medium heat.

4. Add pasta back to pan, mix well and serve hot.

5. Drizzle olive oil over asparagus and season to taste with salt and pepper.

6. Enjoy this lazy delicious, 10 minute dinner.


Calories: 440, Protein: 17 grams, Carbs: 70 grams, Fiber: 12 grams, Total Fat: 12 grams, Saturated Fat: 1 gram, Sodium: 450 mg, Vitamin A: 21%, Vitamin C: 38%, Iron 23%, Calcium 5%.

Notes: This dish is made with packaged foods, however the sodium content for the meal is within a healthy range. Also, this meal is high in carbohydrates, but it provides 12 grams of fiber, making the available carbohydrates 58 grams. I recommend serving this as stuffed zucchini or peppers to reduce the amount of carbohydrates for diabetics, or those that are avoiding gluten and/or grains. It can still be lazy delicious, all you need to do is fill your vegetable with the mixture and bake at 350 for 30-45 minutes.
